To prepare the colorful carrot and capsicum pulao, start by heating ghee in a pan.
Add cumin seeds, green chillies, and finely chopped onions. saute until the onions turn golden.
Once the onions are cooked, add curry leaves and sliced capsicum. cook until the capsicum becomes tender.
Now, add grated carrots and the cooked basmati rice to the pan. mix well to combine all the ingredients.
Sprinkle salt, red chilli powder, and black pepper powder over the rice and vegetables. mix everything thoroughly.
