Heat ghee in two separate pans. add the grated carrots to each pan and saute over low heat for about 10 minutes, allowing the carrot juices to evaporate. add half of the sugar, raisins, and ground cardamom to each pan. cook until the sugar melts and the mixture becomes like orange-colored fudge. divide the evaporated milk equally between the pans and continue cooking until each mixture thickens. spread the mixtures on separate trays and let them cool. divide each mixture into six equal parts.
Take a sheet of spring roll pastry and brush the edges with melted butter. place it diagonally on a work surface. near the corner closest to you, place one portion of orange carrot fudge and one portion of black carrot fudge. fold the corner of the pastry over the carrot fillings and continue rolling until you reach the middle of the strip. tuck in the sides, then continue rolling until you reach the end of the pastry. seal the edges with a small amount of water. repeat the same process with the remaining pastry sheets.
Heat vegetable oil in a deep pan to 160 degrees celsius. deep-fry the spring rolls for about 4-5 minutes, or until they turn golden brown. remove the spring rolls from the oil and drain them on kitchen paper to remove excess oil.
Serve the hot and crispy carrot halwa spring rolls with a scoop of your favorite ice cream.
