To prepare the spiced capsicum and lentil medley, start by washing and soaking the yellow moong split lentils for an hour.
After soaking, drain the water and coarsely grind the lentils along with green chillies, and cumin seeds using a mixer grinder. add a pinch of salt during grinding and set the mixture aside.
Heat sunflower oil in a pan over medium heat. add mustard seeds and urad dal split, allowing them to splutter.
Incorporate the asafoetida and curry leaves into the pan, giving it a quick stir.
Add the sliced red or yellow capsicum to the pan, season with salt to taste, and stir well to coat the capsicum with the spices.
