Prep the fish: begin by washing the fish fillet and cutting it into 8 equal pieces. rub the fish pieces with salt and let them rest for 10 minutes.

Make green chutney: prepare the green chutney by blending coriander leaves, mint leaves, green chillies, and lemon juice until you get a smooth paste. add salt to taste.
Assemble fish sandwich: for each fish sandwich, layer one fish piece with the green chutney, then place another piece on top, creating a sandwich.
