To prepare the italian style broccoli cauliflower soup, first chop the broccoli and cauliflower into small florets, and then blanch them.
In a deep pan, heat 2 tablespoons of extra virgin olive oil. add the chopped onion and garlic, and cook for a couple of seconds until they become aromatic.
Now add the diced carrots to the pan and continue cooking for another 2 minutes. then, add the ripe tomatoes, vegetable stock, and all the seasonings, including red chilli flakes, black pepper powder, salt, italian seasoning, and paprika.
Cook the mixture for 2 more minutes and then add the blanched broccoli and cauliflower florets.
Allow the soup to thicken by cooking it to your desired consistency. taste the soup and adjust the seasonings if needed.
