In a saucepan, bring the rice vinegar to a boil. add brown sugar to the boiling vinegar and stir until the sugar dissolves completely.
Remove the saucepan from the stove and allow the mixture to cool for about 5 minutes.
Add the chopped cucumber, red chillies, red onions, and fresh coriander leaves to the vinegar mixture. sprinkle the salad with salt.
Let the thai spicy cucumber salad sit at room temperature until it cools down well.
