Slice the chicken breast into thin strips and marinate them with soy sauce, honey, and a pinch of salt. let it sit for 10 minutes.
While the chicken is marinating, prepare the vegetables. cut the green capsicum, carrot, and broccoli into bite-sized pieces. finely chop the garlic.
In a small bowl, mix corn flour with a tablespoon of water to make a slurry. set it aside.
Heat a wok or a large skillet over high heat. add a tablespoon of sunflower oil.
Once the oil is hot, add the marinated chicken strips and stir-fry until they are cooked through and slightly caramelized. remove the chicken from the wok and set it aside.
