Blend the remaining corn kernels in the food processor until you get a smooth mixture.
Transfer the blended corn into a mixing bowl and add the reserved whole corn kernels.
Add coriander leaves, thai red curry paste, baking powder, egg, salt, and sriracha sauce to the bowl. mix all these ingredients well until you have a uniform mixture.
Heat a non-stick pan or griddle over medium heat and lightly grease it with sunflower oil.
