Wash the raw mangoes and pat them dry with a clean cloth. peel the skin and remove the seeds. cut the mango flesh into small pieces and place them in a bowl.
In a separate bowl, grate the jaggery to prepare the sweetener for the chutney.
Take 2 tablespoons of mustard seeds and grind them into a coarse powder using a mortar and pestle or a spice grinder.
Add the ground mustard seeds, salt, and red chilli powder to the bowl containing the mango pieces. mix well and set it aside for a while.
In a small pan, heat mustard oil until it reaches its smoking point. let the oil cool down for a few minutes.
