To make the tangy raw mango chutney, begin by boiling the chopped raw mango in tamarind pulp, jaggery, and turmeric powder in a saucepan over medium heat.
Boil until the raw mango becomes soft and cooked. once done, add the sambar powder and salt, and give it a stir.
Allow the chutney to boil until it thickens up.
Once it reaches the desired consistency, turn off the heat.
In a separate tempering pan, add oil and place it over medium heat. once the oil is hot, add mustard seeds and allow them to crackle.
