To prepare the spicy mustard mushroom curry, thoroughly clean the mushrooms under running water and cut them into halves. set them aside.
Peel the potato and chop it into small pieces. keep the chopped potatoes in a bowl of water until needed to retain their color.
Prepare the mustard paste by blending all the ingredients listed under "for mustard paste" until you get a fine, thick paste. add as little water as possible to maintain a thick consistency.
Now, in a kadai or a heavy-bottomed pan over medium heat, add about 2 tablespoons of oil.
First, add the chopped potatoes and sprinkle some salt. saute until they are almost cooked and turn light brown. transfer the cooked potatoes to a paper towel to drain excess oil and set aside.
