To create the fragrant spiced mushroom curry, start by cleaning and slicing the fresh button mushrooms.
Heat a pan with a drizzle of sunflower oil. add mustard seeds and allow them to splutter.
Introduce the curry leaves, sliced onion, and green chilli. saute until the onions turn translucent.
Stir in the sliced mushrooms and sprinkle some salt. cook the mushrooms until they are tender and have released their moisture.
In a separate dry pan, toast the coriander seeds, dried red chillies, cinnamon stick, cloves, cumin seeds, fennel seeds, and black pepper until fragrant. let them cool down.
