To create the spicy sev curry, start by preparing the base. grind the onion, desiccated coconut, garlic, and ginger to a smooth paste. set aside.

In a deep pan, heat a small amount of oil. add the prepared paste and saute until it turns golden and releases a delightful aroma.

Incorporate red chilli powder, turmeric powder, and garam masala into the paste. saute the spices with the paste for a minute to enhance their flavors.

Pour in about 2 cups of water and stir well. allow the mixture to come to a gentle boil.

Once the mixture is boiling, add date palm jaggery and salt. mix well and let it simmer for a few minutes.
