Coat the fish fillets evenly with the prepared spice mixture. allow them to marinate for about 30-40 minutes, ensuring that the flavors penetrate the fish.
Heat coconut oil in a frying pan over medium-low heat. add the curry leaves and let them splutter for a few seconds, infusing their aroma into the oil.
Gently place the marinated fish fillets into the hot oil. shallow fry the fish until they are cooked through and achieve a crisp, golden exterior. flip the fillets to ensure even browning on both sides.
