Start by washing the okra (ladies finger) thoroughly and patting them dry. chop them according to your preference, such as diagonal cuts.
Heat 2 tablespoons of oil in a pan. add the chopped okra and cook for 3-4 minutes, stirring occasionally for even cooking. this will help reduce the slime.
Remove the cooked okra from the pan and set it aside.
In the same pan, add 2 teaspoons of oil. sprinkle cumin seeds and add peeled shallots (small onions). cook for a minute over low flame. then, add finely chopped ginger, green chilli, and cubed onion. cook for 2 minutes over medium flame until the onion turns translucent.
Add all the spice powders (red chilli powder, coriander powder, cumin seed powder, garam masala, turmeric) and the required amount of salt. give it a quick stir to coat the onions and spices.
