In a bowl, combine yogurt and coconut milk, whisking them together until they form a smooth mixture. set it aside.
Heat vegetable oil in a kadhai or a deep skillet. add mustard seeds and let them splutter. then, add onions and curry leaves to the kadhai. saute the onions until they turn golden brown. now, add turmeric powder, coriander powder, and red chili powder to the kadhai, stirring well to mix everything. cook for a minute.
Add the chopped okra to the masala in the kadhai, stirring to coat the okra evenly. cook for about 10 minutes, stirring occasionally to ensure that the masala doesn't stick to the bottom of the kadhai.
Once the okra is cooked, reduce the heat to low and gradually pour in the yogurt-coconut milk mixture. stir immediately to prevent the yogurt from curdling. continue cooking for 5 minutes, allowing the flavors to meld together.
Garnish the bhindi masala curry with freshly chopped coriander. serve it alongside hot chapatis or your preferred choice of bread. enjoy this creamy and flavorful bhindi masala curry.
