To prepare the spicy pressure cooker mutton masala, start by making a fine paste of all the masala ingredients, including black pepper powder, coriander leaves, ginger, garlic, turmeric powder, cloves, organic cinnamon, and red chilli powder.
Optionally, you can marinate the mutton meat with this masala for an hour before cooking, as it allows the flavors to infuse well.
Heat the pressure cooker with 3 to 4 tablespoons of sunflower oil and add the chopped tomatoes. cook until they turn mushy.
Now, add the mutton meat and masala to the pressure cooker. cook on medium heat with constant stirring until the raw smell of the spices disappears. this should take about 4 to 5 minutes.
Pour in 1 to 2 cups of water, depending on the desired consistency of the gravy. adjust the spice and salt levels to suit your taste.
