To begin making the spicy goan prawns masala, let's first make the vindaloo paste.
Heat oil in a heavy-bottomed pan over low flame.
Add ginger, garlic, and saute until they start to brown slightly.
Next, add black peppercorns, mustard seeds, cumin seeds, coriander seeds, fenugreek seeds, cloves, cinnamon stick, and dry red chillies. roast them on low flame until they release a nice aroma, about one minute. turn off the heat and let it cool.
Add the cooled spice mixture and half of an onion into a mixer grinder. grind everything into a smooth paste.
