Roasting the ingredients:
Heat a dry, heavy-bottomed pan over medium-low heat.
Add the dried red chillies, coriander seeds, toor dal, cumin seeds, black peppercorns, and fenugreek seeds to the pan.
Dry roast these ingredients, stirring continuously, until they release a fragrant aroma and turn slightly golden. be careful not to burn them. this should take about 5-7 minutes.
Once roasted, remove the mixture from the heat and let it cool to room temperature.
