To begin making the spiced potato with fenugreek leaves, start by boiling the potatoes in a pressure cooker until they are cooked. once done, peel and roughly mash the potatoes, keeping a few pieces intact.
Heat ghee in a wok over medium heat and add cumin seeds, fennel seeds, and fenugreek seeds. let them splutter.
Add the dried fenugreek leaves (kasuri methi) and saute until their aroma is released into the oil.
Stir in ginger paste and slit green chillies, sauteing until the raw smell dissipates.
Add the chopped tomatoes and saute until they are halfway cooked.
