Preparing the dough: to craft the spiced green pea pockets, initiate by creating the dough. combine flour, ghee, and salt in a mixing bowl. blend to form a crumbly mixture. gradually add water to create a soft and smooth dough. cover the dough and let it rest for 15 minutes.

Filling preparation: for the filling, blend green peas, ginger, garlic, and green chillies in a blender to achieve a coarse mixture.

Tempering: in a heavy-bottomed pan, heat a teaspoon of mustard oil. add fennel seeds and nigella seeds, saut„©ing briefly.

Filling mixture: incorporate the prepared green pea mixture, red chilli powder, garam masala, amchur powder, chaat masala, and salt to taste. stir and cook until the ingredients amalgamate harmoniously. once done, turn off the heat and allow the mixture to cool completely.

Assembly: take the rested dough and shape it into 2-inch circles. in the center of each circle, place a portion of the green pea mixture. bring the edges together and create a ball. flatten the ball to craft disc-shaped pockets.
