Filling mixture: incorporate the prepared green pea mixture, red chilli powder, garam masala, amchur powder, chaat masala, and salt to taste. stir and cook until the ingredients amalgamate harmoniously. once done, turn off the heat and allow the mixture to cool completely.
Assembly: take the rested dough and shape it into 2-inch circles. in the center of each circle, place a portion of the green pea mixture. bring the edges together and create a ball. flatten the ball to craft disc-shaped pockets.
