To make the spiced pickled eggplant, start by preparing the achari masala.

In a pan, dry roast mustard seeds, cumin seeds, fennel seeds, nigella seeds, carom seeds, fenugreek seeds, and dry red chillies until fragrant and slightly browned.

Turn off the heat and transfer the roasted spices and chillies to a mixer jar. grind them into a coarse powder. set aside the achari powder.

Wash and clean the eggplants, and keep them aside.

Heat oil in a wok and add mustard seeds, cumin seeds, and let them crackle.
