To prepare the spiced lentil dumpling curry, thoroughly wash and soak the chana dal for 2 hours.
After soaking, coarsely grind the chana dal with dry red chilies, curry leaves, fennel seeds, and salt to make the base batter for the vadas.
Add water sparingly while grinding to achieve a thick masala vada batter.
Spoon the masala vada batter onto an idli plate and steam it, similar to making idlis. alternatively, you can pan-fry the vada batter in a paniyaram pan with a little oil until they turn brown and crispy.
The pan-fried version adds a delightful taste to the spiced lentil dumpling curry.
