To start preparing spiced potato and vegetable medley recheado, begin by making the recheado masala.
Soak the red chilies, cloves, cinnamon, cumin seeds, black peppercorns, ginger, and garlic in vinegar for 4 to 5 hours.
Heat a pan with a teaspoon of oil and roast the onions until they become soft and lightly caramelized. set aside to cool.
Grind the soaked spices along with the caramelized onions, jaggery, salt, and turmeric powder to make a smooth paste. adjust salt as per taste.
The recheado masala is now ready.
