To create the fragrant lentil and rice medley, start by washing the basmati rice and masoor dal. soak them in water for about an hour.
In a pressure cooker, add the soaked rice and lentils along with turmeric powder, salt, and 5 cups of water. pressure cook the mixture for about 5 to 6 whistles until the rice and lentils are thoroughly cooked. allow the pressure to release naturally.
Once the pressure has released, open the lid and gently mash the khichdi to create a smooth, comforting texture. set it aside.
In a small pan, heat the clarified butter (ghee). add finely chopped onions and sautËúÖ them until they turn translucent and aromatic.
In a mortar and pestle, coarsely pound the garlic cloves and green chilies. add this fragrant mixture to the sautËúÖed onions and continue to cook until the raw aroma dissipates.
