In a blender, combine lemon juice, ginger, garlic, green chillies, salt, and garam masala to make a paste.
Using a sharp knife, make two deep diagonal cuts into each chicken breast, reaching down to the bone. make two equally deep cuts in the thighs and drumsticks as well.
Place the chicken, breast side up, on a roasting tray lined with enough foil to cover the bird completely.
Rub the marinade paste all over the chicken, ensuring it gets into the cuts. set aside for 30 minutes.
