Heat 1/2 teaspoon of oil in a pan. add mustard seeds and let them splutter. then add urad dal and chana dal, and fry until golden brown.
Add green chillies, hing, curry leaves, and ginger to the pan. give it a quick saute.
Add finely chopped onions and a pinch of salt. saute until the onions turn transparent. transfer this tadka (tempering) to the dosa batter.
Add chopped coriander leaves to the batter and mix well. if needed, adjust the consistency by adding a little water. the batter should be semi-thick. set it aside.
Heat a paniyaram pan and add 1/4 teaspoon of oil in each cavity. swirl the pan to ensure that the oil coats each cavity evenly.
