Prepare the chia gel: in a small bowl, combine chia seeds with 3 tablespoons of water. allow it to sit for about 5 minutes until it thickens and becomes gel-like. this will serve as a vegan egg substitute.
Prepare the dough: in a mixing bowl, combine the yeast and whole wheat flour. add the chia gel, 3 tablespoons of extra virgin olive oil, and 1/4 cup of water. mix until the dough forms a ball and no longer sticks to the sides of the bowl. this may take 5 to 8 minutes. transfer the dough to a greased bowl, cover it with plastic wrap, and let it rest for 40 to 45 minutes or until it doubles in size.
Make the caramelized onion and tomato topping: in a large skillet, heat 2 tablespoons of extra virgin olive oil over low heat. add minced garlic and saut„© for a few seconds. add the sliced red onions and cook slowly until they become tender and slightly caramelized. be careful not to let them burn. add the chopped tomatoes and cook until any liquid has evaporated. season with fresh thyme leaves, salt, and pepper. turn off the heat and allow it to cool to room temperature.
Preheat the oven: preheat your oven to 200‚∞c (392‚∞f). line a baking sheet with parchment paper.
Assemble the tart: on a floured surface, roll out the dough into a circle about 9 inches in diameter. transfer the dough circle to the prepared baking sheet.
