Finely chop the red onion and red bell pepper. saut„© them in 1 teaspoon of olive oil over medium heat until they become tender and slightly caramelized. set aside.
In a bowl, combine the sweet corn kernels with rosemary leaves and paprika powder. toss gently to coat the corn evenly with the spices.
Place the slices of whole wheat bread on a baking sheet. brush each slice with a bit of olive oil on one side.
Spread the saut„©ed onion and pepper mixture evenly over the oiled side of each bread slice.
