Preparing yogurt mixture: in a bowl, combine yogurt (curd) and chickpea flour (besan). add 4 teaspoons of water and mix thoroughly to ensure there are no lumps. set this mixture aside.
Dissolving tamarind paste: dissolve the tamarind paste in 3-4 teaspoons of warm water. alternatively, you can soak a 20-gram piece of tamarind in hot water and extract the tamarind pulp. keep it aside.
Saut„©ing tomatoes: heat 1 teaspoon of oil in a pan over medium heat. saut„© the tomatoes until they become soft. remove the tomatoes from the pan and set them aside.
Saut„©ing vegetables: in the same pan, add all the other vegetables (except drumstick) and saut„© for a couple of minutes. turn off the heat and set aside.
Boiling vegetables: in a large pot, add 5 cups of water and boil the saut„©ed vegetables along with the drumstick and tomatoes. season with turmeric powder and salt. allow the vegetables to cook until they are halfway done, which should take about 10 minutes.
