Start preparing the instant mixed vegetable relish by cleaning and drying all the vegetables on a kitchen towel.
Finely chop the mangoes, carrots, and green peas, and transfer them to a mixing bowl. add the juice of two lemons, a teaspoon of turmeric powder, and a pinch of salt. mix well.
In a small blender, combine ginger, garlic cloves, mustard seeds, sesame seeds, and cashew nuts. grind them into a smooth paste without adding water.
Add this paste to the chopped vegetables and mix thoroughly. allow it to marinate for at least 2 hours before serving.
The instant mixed vegetable relish can be refrigerated and remains fresh for up to two weeks.
