To prepare the creamy mixed vegetable handi, start by making a puree of tomatoes and cashew nuts in a mixer grinder. set it aside.
Heat oil in a heavy-bottomed pan and add cumin seeds and bay leaves. cook for 15 seconds.
Add sliced onions, chopped green chilies, ginger, and garlic. saute for about a minute until the onions turn golden brown.
Pour in the tomato-cashew puree and cook for 3 to 5 minutes.
Add turmeric powder, kashmiri red chili powder, coriander powder, and garam masala. mix well and let it cook for another minute.
