To prepare the mediterranean beetroot and walnut spread, start by steaming the peeled beetroot. steaming the beets helps reduce the roasting time and ensures they cook evenly.

Heat a tablespoon of olive oil in a wok, and add garlic cloves, spring onions, and the steamed beetroot.
Stir-fry on medium-high heat until the beetroot acquires a nice roasted flavor. this should take approximately 4 to 5 minutes.
Once the beetroot is well roasted, transfer it to a blender along with the remaining ingredients, including the juice from one lemon. pulse until you achieve a slightly coarse, almost smooth spread.
