Soak cashews in hot water for 20 to 30 minutes. while the cashews are soaking, prepare the other ingredients such as chopping tomatoes, preparing ginger-garlic paste, and slicing paneer.
Drain the soaked cashews and add them to a blender or mixer-grinder.
Add 2 to 3 tablespoons of water and blend until you get a smooth paste without any bits or pieces of cashews.
In the same blender, add the roughly chopped tomatoes. there's no need to blanch the tomatoes before blending.
Blend the tomatoes to a smooth puree. set aside without adding any water.
