Wash the basmati rice thoroughly and soak it in water for about 30 minutes. drain the water.
In a large pot, bring the water to a boil and add the soaked basmati rice. cook the rice until it's about 70-80% cooked. drain and set aside.
In a separate pot, heat ghee and add green cardamom pods, cloves, star anise, organic cinnamon, black peppercorns, and bay leaves. saute the whole spices until aromatic.
If using, add dried onions and cook until they turn golden brown.
Add the partially cooked basmati rice to the pot with the spices and onions. mix gently to combine.
