To begin preparing the creamy carrot khoya delight, in a medium-sized non-stick pan, add grated carrots and saute for about 5 minutes.
Pour in whole milk and mix it gently. allow the mixture to simmer for a few minutes.
Cover the pan and let the carrots cook in the milk for around 3 to 4 minutes.
Once the milk reduces, add jaggery and fresh cream to the mixture. stir continuously for about 5 minutes until it thickens.
Once the mixture achieves a dry consistency, add half of the khoya (mava), cardamom powder, and mix well. continue cooking for another 3-4 minutes.
