To prepare the rajasthani gunda vegetable, first soak the bird lime (gunda) in water overnight or for at least 8 hours. this will soften the gundas.
Drain the water from the soaked gundas and rinse them well.
Heat oil in a pan over medium heat. add fenugreek seeds, cumin seeds, asafoetida, fennel seeds, and mustard seeds. let them crackle and release their aromas.
Add the soaked and rinsed gundas to the pan. stir well to coat the gundas with the tempering.
Sprinkle turmeric powder, red chilli powder, and dry mango powder over the gundas. mix everything together until the gundas are well coated with the spices.
