In a mixer grinder, coarsely grind the peanuts and set them aside.
On a medium heat setting, warm the sunflower oil in a pan. introduce the garlic cloves and saute them until they begin to infuse the oil with their aroma. this should take around 2 to 3 minutes.
Incorporate the finely chopped onions and continue sauteing until they transform into a golden brown hue. this will require about 5 minutes.
Once the diced eggplants have been drained, introduce them to the pan and blend them well with the saute onions and garlic.
