To prepare peanut chayote masala curry, gather all the required ingredients and have them ready.
Heat sunflower oil in a pressure cooker and add the mustard seeds.
Once the mustard seeds start to splutter, add the bay leaves, tomato puree, chopped chayote squash, peanuts, sambar powder, jaggery, dry mango powder (amchur), and turmeric powder.
Saute the mixture for a few minutes until the spices are well combined.
Add salt to taste and about 1/4 cup of water. mix well.
