To make the ash gourd dal curry, start by soaking the yellow moong split and chana dal in water for about 30 minutes.
In a saucepan, add the soaked dal mixture and cubed ash gourd. add turmeric powder and water. cover and cook until both the dal and ash gourd are soft and tender.
In a separate pan, heat 2 teaspoons of sunflower oil. add mustard seeds and let them splutter. then add urad dal and saute until it turns golden brown. next, add curry leaves and saute for a few seconds.
Add the cooked dal and ash gourd to this seasoning and mix well. also, add tamarind pulp and salt to taste. allow it to simmer for a few minutes to blend the flavors.
In the meantime, prepare the spice paste. in a pan, dry roast urad dal, chana dal, coriander seeds, and dried red chillies until they turn aromatic. let them cool down and then grind them with freshly grated coconut to form a smooth paste.
