To start making the spiced ripe mango curry, gently roll the whole mangoes between your palms to soften them.
In a mixing bowl, extract the pulp and seeds from the mangoes.
Add besan (chickpea flour) to the mango pulp and mix it gently to ensure there are no lumps.
Now, add 3/4 cup of water, red chili powder, roasted cumin powder, coriander powder, jaggery, and salt to the mango-besan mixture.
Transfer this mixture to a saucepan and bring it to a boil over medium heat.
