To prepare raw mango sesame curry, cut the peeled raw mango into bite-sized pieces, removing the stone/seed.
In a pressure cooker, add the raw mango, tamarind water, jaggery, turmeric powder, and salt to taste. pressure cook for 2 whistles and turn off the heat.
Allow the pressure to release naturally.
While the mango cooks, prepare the ground coconut masala.
In a preheated pan, add urad dal, chana dal, fenugreek seeds, cumin seeds, sesame seeds, and dry red chillies. roast on medium heat until the dal turns golden brown and crisp. let it cool.
