To prepare the spiced coconut chicken curry, start by heating coconut oil in a large, heavy-bottomed pan over medium heat.
Add sliced onions, ginger, and garlic to the pan. saut„© them until the onions turn deep brown and are well-cooked.
While the onions are saut„©ing, in a separate pan, dry roast the grated coconut over low heat until it turns golden brown in color.
Add whole spices, including cloves and cinnamon, to the roasted coconut. mix well and turn off the heat. allow this mixture to cool slightly. this will also help the dry spices infuse their flavor into the roasted coconut.
Once the coconut-spice mixture has cooled down a bit, grind it into a smooth paste using a little water.
