Start by washing the fenugreek leaves thoroughly and chopping them finely. set them aside.
In a pan, heat sunflower oil over medium heat. add mustard seeds and let them splutter.
Next, add curry leaves and red chilies to the pan. stir-fry for a minute until they release their aroma.
Now, add the chopped fenugreek leaves and a pinch of salt to the pan. cook them until they become tender. once cooked, set them aside.
In another pan, dry roast the chana dal until it turns golden brown and gives off a nutty fragrance. let it cool down.
