To prepare the vegetable medley couscous, heat 1 tablespoon of olive oil in a pan, and saute garlic and onions until the onions turn light brown.
Add the green beans, peas, celery, spinach, and tomato to the pan. cover with a lid and cook for 2-3 minutes to slightly tenderize the vegetables.
While the vegetables are cooking, boil 2 cups of water with salt and one tablespoon of olive oil in a separate pot.
In a mixing bowl, add couscous and the boiled water. let it sit for 7-8 minutes.
Stir the couscous with a fork to separate the grains.
