Cook the green beans and broccoli in a large pot of boiling salted water for 4-5 minutes. add the broccoli after the first 2 minutes. once all the vegetables are tender, drain them well. in the meantime, prepare the raita by mixing together yogurt, grated cucumber, grated ginger, cumin, lime zest, lime juice, and chopped mint leaves. set aside.
Heat oil in a large frying pan and toast the black mustard seeds and chili flakes for a few minutes until fragrant. add the peas, green beans, and broccoli to the pan and toss until heated through. turn off the heat and stir in the carrots and chopped coriander.
Serve the vegetable medley salad warm or cold, with a dollop of raita on top. sprinkle with sunflower seeds and serve with pitta bread on the side, if desired.
