To create the fragrant herb infused vegetable broth, start by heating the olive oil in a large saucepan over medium heat.
Chop the carrots, leek, onion, mushrooms, celery stalks, and garlic cloves.
Add the chopped vegetables into the saucepan and saute them until they are coated with the olive oil and begin to develop a golden brown color. this should take about 10 minutes.
As the vegetables saute, prepare the herbs by tying the thyme and rosemary sprigs together with kitchen twine.
Once the vegetables are nicely browned, add the bay leaves, tied herbs, and raisins into the saucepan.
