To make the spicy kimchi udon stir fry with scallions, start by boiling the udon noodles in hot water until they are just cooked. once done, drain the water and rinse the noodles under cold running water. drizzle some oil over the noodles to prevent further cooking and set them aside.
In a large frying pan or wok, heat some oil and saute the sliced onions until they become translucent.
Add the kimchi to the pan and continue to saute for a few more minutes until it is heated through.
In a separate bowl, mix the pepper paste, soy sauce, honey, vinegar, minced garlic, and red chili flakes to make the sauce.
Pour the prepared sauce mixture into the pan with kimchi and onions. stir to combine the ingredients well.
