To prepare the asian style rice noodle soup, start by boiling the rice noodles in a saucepan with water. add a pinch of salt to the water and once it comes to a boil, add the rice noodles. cook them for about 15 minutes or until they are al dente (partially cooked).
Drain the noodles, reserving the cooking water. rinse the noodles under cold water to stop the cooking process. drizzle a bit of cooking oil over the noodles and toss them gently to prevent sticking. place them on a flat plate to keep them separated.
Now, use the water in which the noodles were cooked as the base for your soup broth. pour it into a large saucepan and add low-sodium soy sauce, sriracha sauce, honey, lemongrass, and all the vegetables. simmer this mixture for about 25 minutes until the vegetables are tender.
Taste the broth and adjust the seasoning by adding salt and black pepper to your preference.
Add the cooked rice noodles to the broth and simmer for an additional 2 minutes to heat the noodles through.
