To prepare the zesty zucchini and peach zoodles salad, start by chopping both ends of the zucchini.
Using a spiralizer, place the zucchini in between the spiked handle and the end of the blade, and then spin the handle to create zucchini noodles (zoodles).
If you don't have a spiralizer, you can still make zoodles by cutting thin slices of zucchini lengthwise and then julienning them into thin, long strips to achieve the desired shape.
Heat a pan over medium flame and add the olive oil, salt, black pepper, tomatoes, and fresh basil leaves.
Toss the zucchini zoodles in the pan for a couple of minutes, ensuring they are cooked through but still retain their al dente texture.
